Summary: | Chemical agents used for oxidation of starch can create chemical waste
problems and potentially leave undersirable residues in final product. Ozone is
known as a strong oxidizing agent and environmentally friendly. Ozonation is one
of the Advanced oxidation Process (AOP), or the latest in rapid oxidation process
and safe for food products. This aim of current study was to determine the
differences of dissolved ozone content and starch slurry concentrations to change
characteristics of the resulting starch oxidation.
The research began with determination of dissolved ozone concentration
of water (O) used as a variation of the treatment (0 ppm, 0,3 ppm |
