Summary:The ear mushrooms are vegetables that are in great demand by the public to be developed or cultivated, both as food and medicines. Ear mushroom has a water contend of 89.1%, high moisture content allows the chemical reactions and the activity of microorganism, it will damaged. To maintain the quality of ear mushrooms are by dried naturally, but natural drying has the disadvantage that takes 3-4 days even if there is rain during the drying process on unfavorable natural factors, and thus dried ear mushroom production will decline. It is therefore necessary efforts to make ear mushroom production has remained stable dryers needed effective. Drying using tray dryer is one alternative that can be used to dry the ear mushrooms. Dried ear mushrooms that will be placed on each try with the weight of each test sample and l0 grams of dried for 240 minutes. At the 30th minute in a test sample weighed back and recorded the temperature of the drying chamber on each tray, this is done per 30 minutes. While the air discharge varied 0.0078 m3/second, 0.0156 m3/second and 0.0234 m3/second with a temperature of 50, 60 and 70 oC. To test the moisture content by oven method, AOAC (Association of Official Analytical Chemist). Result of testing were analyzed by calculating the dry basis moisture content and drying speed. The results obtained in testing showed that the drying by using a tray dryer takes an average of 120-180 minutes, while the water levels reached an average of below 10%. The ear mushrooms are placed on a tray dried faster than those placed on the tray 2, 3 and 4. Based on the results of testing each increase in temperature and air flow, the drying rate of the greater time of ear mushrooms. Drying at 60 oC air discharge 0.0234 m3/second is an effective drying.
