Summary:The physicochemical characteristics of stingless bee honey from species Tetrigona apicalis were ascertained. Five different logs of stingless bee honey from same species were selected. During the experiment, there are five different parameters were investigated. This includes pH, total acidity, ash content, colour intensity and moisture content. The characteristic of honey obtained from the experiment were differ compared to the previous studies of honey from the same species. Only pH value was almost similar. This might be cause by different geographical region and flowering season in UiTM Pahang, Jengka Campus. For the Tetrigona apicalis sp. honey, the value for pH was 3.31±0.01 to 3.43±0.02, total acidity was 126.67±5.77 to 152.33±6.23 meq/kg. Meanwhile the value for ash content 0.240±0.03 to 0.490±0.03 g/100g, colour intensity was 0.83033±0.01 to 1.30523±0.01 Abs and for moisture content was 27±00 to 34.20±0.00%. The result obtained during the experiment is important to determine the quality of stingless bee honey. The samples of stingless bee honey were collected in UiTM Jengka, Pahang.
