response (dependent variable) which evaluates the
extraction process for both methods were degree of
hydrolysis (%) and protein concentration (mg/mL). From
the results, extraction using enzymatic method-enzyme
alcalase showed the highest yield of protein extracted
(58.37%) and highest protein concentration (7.72 mg/ml)
compared to enzymatic method-enzyme protamex. |
