The Journal is published 4 issues/year (i.e., Mar, Jun, Sep, and Dec). อาหารทะเลที่มีบทบาทสำคัญทางโภชนาการในอาหารทั่วโลก รายงานการผลิตและบริโภคอาหารทะเลมี ตัวเลขที่เพิ่มมากขึ้นพรอ้ ม ๆ กับรายงานอาการไมพึ่งประสงคจ์ ากการรับประทานก็เพิ่มมากขึ้นดว้ ย การศึกษา ทางระบาดวิทยาพบว่าอาหารทะเลเป็นสาเหตุสำคัญในการเกิดการแพ้อาหารในประเทศไทย การวินิจฉัย การแพ้อาหารทะเลอาจต้องอาศัยการตรวจเพิ่มเติมโดยการทำ skin prick test การวัดระดับ specifi c immunoglobulin E ในเลือด ก่อนจะตรวจยืนยันด้วย oral food challenge เนื่องจากการแพ้อาหาร ทะเลในผู้ป่วยส่วนใหญ่มักเป็นตลอดชีวิตต่างจากอาหารชนิดอื่น เช่น นมวัว ไข่ การรักษาที่สำคัญจึงยังคง เป็นการงดอาหารนั้นตลอดไป ปัจจุบันมีการศึกษาที่ลงลึกถึงลักษณะและคุณสมบัติทางวิทยาภูมิคุ้มกัน ของสารก่อภูมิแพ้ในอาหารทะเล ทำให้ทราบชนิดสารก่อภูมิแพ้ในปลาและ shellfi sh ว่าคือ parvalbumin และ tropomyosin ตามลำดับ นอกจากนั้นยังมีการศึกษาถึงการเกิด cross-reactivity ระหว่างปลา ต่างกลุ่ม และระหว่าง shellfi sh ชนิดต่าง ๆ กับแมลงเช่น ไรฝุ่น และแมลงสาบ ในอนาคตการวิจัยเกี่ยวกับ การแพ้อาหารทะเลจะช่วยพัฒนาคุณภาพการวินิจฉัย การรักษา โดยเฉพาะวัคซีนโรคภูมิแพ้สำหรับผู้ป่วย ที่แพ้อาหารทะเลที่อาจนำมาสู่การหายขาดจากโรคได้ 2019-05-07T10:02:45Z 2019-05-07T10:02:45Z 2016 บทความวารสาร 0125-5983 https://www.tci-thaijo.org/index.php/CMMJ-MedCMJ/article/view/87747/69220 http://cmuir.cmu.ac.th/jspui/handle/6653943832/65210 Tha Faculty of Medicine, Chiang Mai University |
