Summary:Beside as an antioxidant, quercetin also has antimicrobial activity, but there is no further information about antimicrobial activity of the oxidation products. This research head for determining the antimicrobial activity of the oxidation products. Quercetin was oxidized by H2O2 with help by horseradish peroxidase as catalist. The oxidation products were extracted with ethyl acetate. Quercetin and oxidation products were characterized with HPLC, elucidated with methanol and 25 mM KH2PO4 3:2 at 207, 255, 294, 303 dan 373 nm wavelength. Antimicrobial activity of quercetin and oxidation products were compared with Agar Diffusion method. At 255 and 373 nm, quercetin has absorbance. The oxidation products have no absorbance in 373 nm but have absorbance in 255. Antimicrobial activity of quercetin was shown with blocked diameter for used concentrations to S. aureus dan E.coli, while the oxidation products only have blocked diameter for 3 and 2 mg/mL. There is no blocked diameter to C.albicans for used concentration and oxidation products. Statistically, there are significant differences on antimicrobial activity between quercetin and oxidation products. The oxidation products have lower antimicrobial activity than quercetin.
