Summary: | Antioxidant activity of rice bran oil depends on the content of its antioxidant compounds, e.g. y-oryzanol and tocopherol, which is varied due to manufacturing process of the oil. The determination of y-oryzanol in six different types of rice bran oil and their in vitro antioxidant activity were carried out. Quantitatively, the EC50 value of one type of rice bran oil had been determined. The y-oryzanol content in these oil were spectrophotometrically determined at lambda-max 327 nm. The antioxidant activity of these oil were qualitatively and quantitatively determined by DPPH method. The y-oryzanol content were respectively found to be 0.39%, 0.59%, 0.54%, 1.80%, 2.13% and 2.06%. The six different types of rice bran oil showed antioxidant activity both qualitatively and quantitatively. Generally, the antioxidant activity was found to be proportional to its y-oryzanol content. Effective concentration 50 (EC50) value of one tested type of rice bran oil was 0.056 mg/mL. |
