Cellulose can\'t be digested by man , because the human intestine does not have Cellulase which can break the (3-glukosidic link between the cellulose units. Cellulase is not only produced by microorganism, but also produced by worms and snails. It is an extracellular enzyme, made in the cell and excreted to the surroundings, entered into the hepato-pancreas of the snail. Cellulase, in the snail, Achatina fulica, is found in the hepato-pancreas. This enzymes can be isolated and used for hydrolyzing cellulose. From the result of this study, it was found that the cellulase from the snail, is active at 37°C (optimal temp),the optimal pH is 5,2 , the Km is 0,0142 mg glucose/ml and the Vm is 0,025 mg/ml/sec. Cellulase from the snail was used for hydrolyzing cellulose of pineapple fiber with specific activity about 0,7727 mg protein. The optimal incubation time is 6 haur. Beside using free enzymes, hydrolysis can also be done by immobilizing the enzymes, but this seems to be not practical since cellulose can not be dissolved. text |
