Currenty, based on the observation, the restaurant has the queuing time about 20 – 25 minutes, in average for the peak hours. Even though, the SOP and the customers’ requirement, based on the interview and observation, asked to get the queuing time in less than 15 minutes, in the peak hours (12 PM – 2 PM & 4PM – 8 PM). <br /> <br /> Therefore, the queuing analysis is provided to overcome these difficulties. The queuing analysis will contain the queuing theory, defining the business process model that the restaurant used, the six sigma analysis, control chart to check the solution. The queuing analysis will be done by using the BPMN to picture the business model and the Minitab Software to define the measurement stage in six sigma analysis. <br /> <br /> The input data that gotten from data collection methods, such as questionnaire, interview and observation, will be verified and validated before used as the primary data for the research.
