Fercaf has some similarity with wheat flour so fercaf can be alternative materials to substitute wheat flour into food raw materials. One of the determinants of fercaf’s quality is the drying process. Drying process becomes an important process because removing water content in cassava chips should be done without changing nutrition content and color of the fercaf chips. The purpose of this research is to design an air preheating system for fermented cassava chips drying process with solar drying method. Cassava chips that will be dried are the cassava that has been fermented. Quality of dried product will be compared to the fercaf standard in SNI 7622:2011 document. The research will be done with solar drying base and using a blower for air flow. A heater will be used as well to keep the temperature in the drying chamber. The variation that will be done is the temperature of heated air and baffle setting in the drying chamber. From the research, we conclude that the air preheating system will be using a 2000 W of finned heater to increase the heat of air in range 50-75oC. Moreover, the installation of an air preheating system in the drying chamber causes the conditions in the drying chamber to become hotter so the air can circulate out and increase the drying rates. text
