Summary: | Canary (Canarium indicum) nut is a source for vegetable oil and has potency to be used
widely. Some researchs suggest that oil with high unsaturated fatty acid gives greater benefit for
health. Therefore, canary nut oil with higher proportion of unsaturated fatty acid can be used
wider in food, medicine, and cosmetics production. Increasing unsaturated fatty acid content can
be done using enzyme produced by Rhizopus oryzae. Rhizopus oryzae was grown in oil containing
medium in order to produce extracellular enzyme. Canary nut oil and enzyme solution were
incubated and optimum time for enzymatic reaction was determined. Fatty acid composition
analysis was done using High Performance Liquid Chromatography after hydrolysis and
derivatization to p-bromophenacyl ester form. Rhizopus oryzae growth medium was able to
increase 2.94% of unsaturated fatty acid in canary nut oil with optimum incubation time was 50
minutes. Therefore, enzyme from Rhizopus oryzae growth medium can be used to increase
unsaturated fatty acid percentage in canary nut oil. |
