MODIFYING STARCH USING DODECENYLSUCCINIC ANHYDRIDE FOR PICKERING EMULSION STABILIZER APPLICATION

Pickering emulsion is a type of emulsion that is stabilized by solid particles. The use of solid particles as emulsion stabilizing agents in cosmetics can minimize skin irritation. Starch can be used as an emulsifier but has limitations such as low solubility in water at room temperature. To increase starch solubility and adding hydrophobic groups, starch can be reacted with dodecenylsuccinic anhydride (DDSA) to produce ester starch-DDSA. In this study, starch was isolated from cassava with a yield of 8.9%. Starch-DDSA was characterized by FTIR, degree of substitution and testing the emulsion stability. Tests characterization of starch-DDSA by FTIR showed new bands at the wave number around 1724 cm-1 which was a carbonyl group and 1571 cm-1 which was a C-O ester group. The degree of substitution obtained to starch to DSSA ratio of 1:0.5, 1:1, 1:2, and 1:3 is 0.0033, 0.0065, 0.1946, and 0.2540, respectively. The emulsion stability test shows that the higher the degree of substitution, which means more DDSA bound to the starch, the higher the emulsion stability
