To increase starch solubility and adding hydrophobic groups, starch can be reacted with dodecenylsuccinic anhydride (DDSA) to produce ester starch-DDSA. In this study, starch was isolated from cassava with a yield of 8.9%. Starch-DDSA was characterized by FTIR, degree of substitution and testing the emulsion stability. Tests characterization of starch-DDSA by FTIR showed new bands at the wave number around 1724 cm-1 which was a carbonyl group and 1571 cm-1 which was a C-O ester group. The degree of substitution obtained to starch to DSSA ratio of 1:0.5, 1:1, 1:2, and 1:3 is 0.0033, 0.0065, 0.1946, and 0.2540, respectively.
