One way to prevent damage for strawberries is the use of a moisture absorber and oxygen scavenger. This study was conducted to evaluate and obtain information on the use of a good combination of oxygen scavenger and moisture absorber concentrations on the quality of strawberries at room temperature and cold storage. This research method is a Completely Randomized Design (CRD) with two test variables, namely the combination of oxygen scavenger (cc) and moisture absorber (g) concentrations. The treatment combinations include: A (170 cc-6 g); B (170 cc-10 g); C (170 cc-14 g); D (200 cc-6 g); E (200 cc-10 g); F (200 cc-14 g); G (240cc-6 g); H (240 cc-10 g); and I (240 cc - 14 g) and storage temperature (4 ± 2 oC and 27 ± 2 oC) which were repeated twice. The tests carried out included weight loss, water content, decay indicator, color change, total dissolved solids, titrated acid, pH, hedonic and hedonic quality organoleptics. The results showed that giving a combination of oxygen scavenger and moisture absorber for packaging strawberries at room temperature and cold storage can maintain moisture content and pH levels, inhibit spoilage, and maintain sensory qualities. The shelf life of strawberries at room temperature can reach 6 days and a good concentration to use is 200 cc oxygen scavenger and 6 g moisture absorber. The shelf life of strawberries in cold temperatures can reach 12 days for a concentration of 240 cc oxygen scavenger and 6 g moisture absorber. text
