Summary: | Fresh strawberries are non-climacteric fruits that are perishable because they have a high respiration rate. Various ingredients and preservation technologies are used to improve the quality and economic value of fresh strawberries so that consumers can consume them in good quality. Moisture-absorbing material is one of the types of active packaging that can be used to maintain quality and extend the shelf life of strawberries. This study aims to evaluate and obtain information regarding the use of active packaging concentrations of moisture-absorbing agents that are good for the quality of strawberries at cold room temperature storage. The research method used in this study was a completely randomized design (CRD) with treatments consisting of: solupak 0 g, solupak 6 g, solupak 10 g, and solupak 14 g with cold storage (4±2oC) and room temperature (27±2oC) three repetitions. Strawberries (± 145 g) packed in polypropylene (PP) packs measuring 18 × 8 × 4.5 cm and 0.47 cm thick with 4 perforated holes (0,47 mm). The analysis is conducted using ANOVA and Duncan's continued test with a level of 5% for all test parameters except for organoleptics. The test parameters carried out included weight loss, moisture content, indicators of decay, color quality, total dissolved solids, total titrated acid, degree of acidity, organoleptic quality of hedonic and hedonic quality of strawberries. The results show that giving moisture absorber for packaging strawberries in cold and room temperature storage can maintain water content and dissolved solids, microbial damage, and maintain quality. The shelf life of strawberries at cold temperatures with the use of 14 g solupak can extend the shelf life up to 12 days, while at room temperature using 10 g and 14 g solupak can extend the shelf life up to 6 days.
