Summary:Bananas are a type of climacteric fruit, so bananas will continue to experience a spike in maturity even they have passed the harvesting process. Transportation of yellow Ambon bananas (Musa acuminata) from producers to consumers for three hours by motorbike is indicated to cause damage to Ambon yellow bananas. As a climacteric fruit, bananas will experience a spike in respiration rate in response to higher temperatures. Likewise with the increase in the production of ethylene gas. In order to reduce the rate of ripening of bananas during the transportation process, it is necessary to modify the packaging system of bananas in courier bags during the transportation process. KMnO4 acts as an ethylene scavenger which is applied to courier bags to prevent damage and maintain the quality of bananas from damage to ethylene gas emissions during the transportation process of product delivery to consumers. This research will focus on the effect of ethylene gas on the damage of Ambon yellow bananas and the prevention of damage to bananas due to ethylene gas during the transportation process for shipping to consumers. The results showed that the addition of KMnO4 as an ethylene scavenger could maintain the quality and prevent damage to the yellow Ambon bananas during the transportation process for shipping to consumers. The treatment of 3 grams of KMnO4 without the addition of icepack as a temperature stabilizer gave the best results in terms of weight loss, changes in acidity (pH), and changes in total dissolved solids as well as from organoleptic testing. From this research, it can be concluded that potassium permanganate can be used as a material to maintain the quality of yellow Ambon bananas during shipping.
