Coffee skin waste generated from coffee processing ranges from 50-60 percent of the coffee harvest. The utilization of coffee skin waste in Indonesia is still not optimal due to a lack of knowledge by farmers regarding the use of the waste. The trend of coffee consumption in Indonesia has increased in the last 10 years and coffee skin waste will become a new problem if left alone because it will cause a foul odor and pollution to the surrounding environment. So it is necessary to choose the right processing technology for farmers in managing the coffee skin waste produced. In the selection of coffee skin waste processing technology, a multi-criteria analysis was carried out using the purposive sampling method by asking the opinions of several stakeholders to determine the appropriate processing technology. Involving 9 respondents from 3 stakeholders related to coffee skin waste in determining the technology for processing coffee skin waste. The results of the questionnaires and interviews were processed using the expert choice to determine the choice of technology that represents the answers from various sources. Based on the calculation results, the technology chosen in this study is silage technology with a value of 0.447, compared to biogas and composting of 0.28 and 0.244, respectively. With a total production of coffee husk waste of 1152-1920 kg/ha/year, it can be used as animal feed for 84% cheaper than the market price. text
