Indonesia has conducted a study on exposure to preservatives but has not covered all preservatives permitted by BPOM-RI. This research consists of two parts, literature review and analysis of preservatives exposure in Indonesia. The literature review was carried out by searching the literature using a search engine and applying inclusion criteria to obtain 22 references. The purpose of the review is to obtain data and information related to the exposure of preservatives in several countries. Results showed that exposure of preservatives in several countries is still below the ADI value except in Austria and France. The purpose of the exposure analysis is as a preliminary study to obtain information about the estimated average level of food preservatives exposure in Indonesia in the group of children (4-18 years) and adults (19 to over 80 years) based on the maximum permitted level and daily consumption data set by BPOM- RI. The results showed that exposure of food preservatives in Indonesia and compared to other countries was still below the ADI value. The highest daily average exposure was found in nitrite, reaching 42% - 68% ADI in the children and adult groups. text
