The purpose of this research was to determine bacteriological quality of sweet condensed soy milk in order to meet the requirements for pathogenic bacteria limit as published by Badan Standardisasi Nasional (BSN). Bacteriological assay was conducted on raw materials such as Total Plate Count (TPC), coliform bacteria test, and pathogenic bacteria occurrence test to determine early standard of manufacturing process, continued by production process. The assay was also applied for the end product. The result of the assay toward soy milk showed 18 colonies/mL for TPC,<3 MPN/mL for coliform bacteria and negative for Escherichia coli, Salmonella, and Staphylococcus aureus. The result of the assay on end product showed 160 colonies/mL for TPC,<3 MPN/mL for coliform bacteria and negative for Escherichia coli, Salmonella, and Staphylococcus aureus. <br /> text |
