ETD This study aims to: (1) characterize the physical and chemical properties borassus palm fruit mesocarp, (2) determine the best type of solvent to extract the bioactive compounds of borassus palm fruit mesocarp by maceration method, (3) evaluate the antioxidant properties of palm fruit mesocarp using DPPH method, (4) analyzed the economic potential of the laboratory-scale production of carotenoid compounds from the borassus palm fruit mesocarp. Research methods for testing the physical character such as testing dimensions using calipers, micrometers thick skin by using screws, length, width, color, fruit, and organoleptic testing the flavor, color, texture, and aroma of the fruit mesocarp palm. Testing the chemical character of the water content (AOAC, 1995), total fat by Soxhlet method, total carotenoids and β-carotene (spectrophotometric method), Ash (AOAC, 1995), Tannin (Spectro by Tamilselvi, et. Al., 2012). Extraction is done by methods that Thompson, et. al. (2000). To identify the bioactive compounds are carotenoids in palm fruit mesocarp with Thin Layer Chromatography (TLC) goes discaning spectrum in the UV Vis Spectrophotometer. Palm fruit mesocarp extracts were obtained and analyzed the antioxidant activity using DPPH method and the resulting yield.
