Summary:Kedai Jamoer is one of the restaurant that serves many kinds of food and beverage based on mushroom. To make good impressed, Kedai Jamoer gives highly good service for its customers. As time goes by, the customers come more and more so this circumstance makes queueing. Causing of this problem is increasing customers arrival without fast respon. Slow respon caused by minimum facilities in kitchen room. This research uses modelling approach and simulation technique. The aims are learning about characteristics and behaviors of service system and how to cut waiting time in Kedai Jamoer�s kitchen. In this research, ProModel is used to arrange model and simulation and Paired t-test is used to validate of model. The indicator that used is waiting time for getting services from kitchen servers. The early result of fisrt model shows that there is long queueing in kitchen room with duration time 10,18 minutes. To solve this problem, research has arranged three alternative models that consist of increasing the speed of part of serving process, increasing the speed of whole of serving process and moving a waiter to help kitchen arrangement. Based on the result of simulation models and calculation cost service, the best alternative choosen is the third alternative with shortest duration of wating time 1,06 minutes and the most reasonable cost service 40.720 rupiah per hour.
