Summary:Gembili starch is one of gembili product which can be treated to be modified starch. By modifying the structure of starch by chemical reaction. Modified starch can be used as a encapsulant in the encapsulation process of the flavor components which are very volatile using spray drying. One of the very volatile ingredients is liquid smoke. The liquid smoke contains phenol, carbonyl, and acids that have the ability to be a flavoring agent, antioxidant, and antibacterial. However these compounds are easily lost during storage. Encapsulation used to prevent losing of these compounds. This research aimed to determine the influence of the initial pH of starch solution on the degree of substitution and solubility of starch modification and also the influence of the addition of modification starch on the characteristic of liquid smoke microcapsule produced. Production of modified starch in this research used acetylation method with temperature 45o C during 90 minutes and the variation of the initial pH of starch gembili solutions are 7, 8 and 9. Then, modified starch result was analyzed by the degree of substitution, solubility, and particle size. Starch modification made from the selected initial pH of the starch solution was analyzed its characteristics and used as liquid smoke encapsulant. The additional variation of liquid smoke and modified starch are 1:2, 1:2,5 and 1:3 (w/w). Then the liquid smoke microcapsule produced was analyzed its characteristics. The result of this research indicated that the initial pH of starch solution 9 had the highest subtitution degree and the solubility was 0.12 and 36.08%. The amount of modified starch can affect the characteristic of liquid smoke microcapsule. The optimum ratio of redistilat liquid smoke and modified starch in encapsulation process was 1:3 (w/w).
