Summary:PT Bandeng Juwana is a corporation operating in processed food industry. Its main product is soft thorn milkfish or known as bandeng presto. Cleanliness in food processing is success key in safe and healthy food processing. Therefore the industry should hold cleaning program, by implementing good sanitation program. Objective of this apprenticeship program is to study industrial system and obtain direct experience in real and systematic way. Guidance related to sanitation was used to identify aspects influencing sanitation application. Guidance of 2010 CPPOB was used to observe sanitation implementation in PT Bandeng Juwana including sanitation facility, employee, material, machine and equipments, process monitoring, and final product. These aspects influence product resulted. After problems and cause of deviation were identified, corrective measure was conducted on existing deviation. Based on the 2010 CPPOB, there is deviation occurring in sanitation application in PT Bandeng Juwana. It occurred on sanitation facility (18.18%), employee (37.5%), process monitoring (20%), and final product (33.33%). The deviation includes less sanitation facility such as hand washing equipment, hand drying tool, employee room, employee not using working tool, less test on end product, and no clear requirement on material used for once production. Solution proposed for the deviation is to add sanitation facility, do training on employee in relation to sanitation, make laboratory team to test product before distributed, and make requirement on material used in one production cycle.
