Summary:Milk is a good medium for microbial growth because it has a high moisture content and complex nutrients . This causds the milk degrade asily and has a short storability. Modifying the milk into powder using spray dryer equipment could increase the storability of the milk. Spray dryer conventional that found in society is an industrial-scale with high capacity and has a very expensive price. This condition required to design a cheap spray dryer with a medium capacity tobe used widely in the community. The purpose of this research is to design spray dryer with pneumatic nozzle type for drying milk. The material that is used is a cow milk which have been pasteurized and homogenized. Obtaining the optimum drying conditions is did by analyzing the influence of the inlet air temperature and drying airflow on the quality of the final moisture content , bulk density , degree of whiteness , wettability and flowability powders. It also did by analyzing the influence of the inlet air temperature and drying airflow on the production efficiency and air heating efficiency and drying efficiency as an indicator of a good spray dryer . Inlet air temperature variation used was 250 o C , 260 o C , 270 o C and airflow variations was 0,0050 m 3 /s, 0,0066 m 3 /s, 0,0075 m 3 /s and 0,0082 m 3 /s. The result is an increasing of inlet air temperature causes a decreasing in the moisture content , bulk density and production efficiency . The increasing of air flow causes an increasing in moisture content , bulk density and production efficiency . The optimal air temperature is obtained at 260 o C and drying airflow at 0.0066 m 3 /s based on the value of final moisture content and degree of powder whiteness. The maximum of air heating efficiency was obtained at 94% and maximum drying efficiency at 4,399%.
