Flesh of mud crab. Scylla serrata, consists of various protein as well as enzymes. The approaches used to carry out protein profiling of Mud Crab, Scylla serrata, in flesh was Sodium Dodecyl Sulfate Polyacrylamide Gel Electrophoresis (SDS-PAGE). The application of this method involved the induction of negatively-charged ions to the samples in order to separate protein solely based on sizes. The determination of molecular weight of unknown proteins was done via the application of Image J Software.
