The changes in protein, starch, and sugar content of Vigna unquiculata (cowpea) and Psophocarpus tetraqonolobus (winged bean) stored in ambient and cold temperature were investigated.The results showed a general decrease in the protein, starch, and sugar content of the pods and seeds of cowpea and winged bean in both ambient and cold temperature. The decrease in these parameters as affected by temperature and storage duration were found to be highly significant based on F-test. It was observed that cowpea pods and seeds can be stored for a maximum duration of 3 days in ambient temperature, and 4 days in cold temperature without a significant difference on its protein, starch, and sugar content.
