Results showed that the as in and starch portion of Dark ubi contain higher contents of calcium that the Light ubi samples. Atomic absorption spectrophotometric method was also employed in the analysis of iron in the two varieties. Results revealed that the two portions of Dark ubi contain dominantly higher concentrations of Fe than the Light ubi samples. The UV - VIS spectrophtometric analysis was used in the determination of phosphorous adopting the ammonium-- molybdate method. The results obtained show that the Dark ubi samples have higher F contents than the Light Ubi samples. In the determination of potassium, flame emission method was adopted.
