Summary:A microbial analysis of chicken macaroni salad was done for the salad served at the Salad Express of Harrison Plaza called Chicken Royale Macaroni. A total of six samples were analyzed in a span of three consecutive months from July to September 1996. Two samples were purchased each month and analyzed for the presence of Salmonella Staphylococcus and fecal coliforms particularly Escherichia coli. The results obtained after performing the standard procedures set by the Bureau of Food and Drugs (BFAD) indicated a consistent (100%) presence of all the pathogens aimed to be detected. The results indicate that the Chicken Royale Macaroni Salad is contaminated with Salmonella, Staphylococcus and Escherichia coli.
