At the end of 15days treatment, kidney sections were prepared and examined by scoring the glomeruli as normal, nonfragmented necrotic, and fragmented necrotic. At week 1, most of the glomeruli observed consisted of normal and necrotic nonfragmented glomeruli. At weeks 2 and 3, treated mice showed an increase in the number of fragmented necrotic glomeruli compared to the control with mice treated with the highest amount of soy sauce exhibiting the highest number of necrotic fragmented glomeruli. The results show dose and temporal effect of soy sauce treatment on kidney histology. The high salt content of soy sauce and its consumption over time may result in increased overall systemic blood pressure, and increased pressure in the glomerular capillaries which could account for the observed glomerular changes.
