In this research, the researchers putatively identified volatile components of Philippine roasted pili nuts using headspace analysis-gas chromatography-mass spectrometry, investigated the difference of the putatively identified compounds of Philippine roasted pili nuts and the soil mineral conditions depending on location through principal component analysis, and analyzed weather conditions such as dry bulb, rainfall, and relative humidity through univariate analysis of variance (ANOVA). Putative identification of compounds from Bicol, Samar, and Quezon Pili nuts through Headspace GC-MS showed 38 peaks with 21 putatively identified compounds and 17 unknown compounds and were clustered separately based on PCA. Results also revealed that the soil minerals Na, K, Mg, and Ca were significantly different across the three locations.
