Summary:Yu Sheng is a raw fish salad that consists of slices of raw fish with a variety of vegetables of different colors. It is considered an important dish to the Chinese and is usually consumed during Chinese New Year where people gather around the table and toss the ingredients with shouts of ‘Lo Hei’ and other auspicious wishes. This colourful salad has more allegorical meaning than merely just a dish, but also how it represents Chinese’s beliefs. Every single process from the meaning of its name, the aesthetics of the dish, the preparation required, the act of reunion, the mingling with friends and relatives encompasses a different value. As time passes, the younger generations are less aware of the many symbolisms of Yu Sheng even though in recent years, it became a popular festive dish. It then begins to lose its essence when it is only being regarded as food. This project aims to uncover the layers of deeper meanings of Yu Sheng and convey the importance of the Chinese cultural virtues and values through it.
