Summary:The objective of this project is to develop an effective coating that can be easily applied to preserve fruits for longer shelf life. In this study, the project materials chosen were apple and Chitosan, an antimicrobial polymer. The experiments were carried out by applying the chitosan coating onto the apple samples. The results were collected through photographs, weighing and visual inspection. The factors that were studied includes effects on concentration of chitosan in its solution, pH of the solution and weight loss on chitosan coated samples. The results showed that the chitosan coated samples stored in a fridge and an air-conditioned room had successfully inhibited microbial growth. Also, the effectiveness of the chitosan coating were highly dependent on storage condition and concentration of chitosan in its solution.
