Summary:Mount Set Education Curriculum (KTSP) at Madrasah Aliyah was conducted to quality of education in which method of developing cognitive, psychomotoric and affective sense of student needs to be improved leading to understanding of basic chemistry concept easiliy. Coconut oil producing process by bread yeast (Saccharomyces cerevisiae) (fermentation method) is an example of chemical concept that includes colloid, emulsion, protein and of course fat or oil. Coconut milk which is an emulsion will be degraded and unstable due to the existence of protease enzyme originated from bread yeast, producing three phases namely water, protein and oil.
