Dryers that will be released in this study consist of dryers that have a fan voltage or an air flow rate of 4V (1,85 m/s), 6V (2,55 m/s), and 8V (3,45 m/s), and contains 150 ± 30 grams (1 tray), 300 ± 30 grams (2 tray), and 450 ± 30 grams (3 tray). The experimental design used in this study is one-variable-at-a-time (OVAT), the first variable tested is the fan voltage followed by the drying load test. Based on this research it was found that as the fan voltage increases the drying process will take place faster, but the results are not significantly different. Then, increasing the drying load makes the drying process longer, but the efficiency is higher at 28.74%. In addition, the process of drying this sweet potato chips requires an activation energy of 64.68 Watt/kg, a specific energy consumption of 1.34 KWh/kg, and a drying rate of 0.1235%/minute. Wang & Singh's mathematical model is the most appropriate mathematical model to describe this drying process. Next evaluation of the results of drying, this tool produces flour with 74.29% starch content and 3.47% ash content. Based on the results of the study, it can be concluded that the most effective specifications for dryers are with a 4V fan voltage and 3 tray drying load. text
