Summary:Gelatin is a protein derived product that is commonly used in food and pharmaceutical products. However, the use of products containing gelatin still raises concerns among consumers, especially about gelatin source due to halal concern. Until now, the source of gelatin in the world is still dominated by porcine skin. In Indonesia, where the majority of the population is Muslim, consuming gelatin derived from pork is not allowed because it is prohibited under shari’ah law. Therefore, halal product guarantee for product that contain gelatin is very important. Through literatures review, analytical methods that can be used to distinguish porcine gelatin and bovine gelatin in products was collected. Then the methods were analyzed and compared, so that an analytical method that can distinguish porcine gelatin and bovine gelatin in products easily, effectively, and efficiently can be developed . In the future, it is hoped that this research can enrich the literature regarding methods that can be used to analyze gelatin sources and can provide suggestions about methods that can be used to differentiate porcine gelatin and bovine gelatin, so that they can be proven through laboratory experiments later.
