Summary:Milk is a kind of food that is consumed a lot due to its high nutrient content, however, the kinds and quality vary a lot and is easily spoilt. Electrical impedance spectroscopy (EIS) is a way to characterize a material by measuring the real and imaginary impedance of that material. One readily available and economical IC for EIS is AD5933. Experiments are conducted using AD5933-based system, on the frequency range of 30 – 150 Hz, using parallel plate electrodes to observe the impedance spectrum of UHT and pasteurized milk left in open air for a period of time. Experiment results show that the AD5933 can produce different impedance spectra for different kinds of milk, that fits the Randles and constant phase element circuit model. On the other hand, system accuracy needs to be improved to detect the impedance changes with time of the milk.
