Therefore, it is necessary to know and explain the effect of lighting, especially illumination and light temperature, on the perception of Gayo arabica coffee taste. The experimental method used in this research adopted the cupping test stage to assess coffee taste. The respondents who tasted coffee were cuppers who were experts in the coffee industry, including roasters and baristas. Experimental data was tested using Friedman's test analysis with a total of 7 respondents. The results showed that dim lighting with a warm temperature of 2700 K and illumination measuring ± 30 lux affected the taste perception of Gayo honey arabica coffee with Balance, Clean Cup, and Sweetness indicators and natural Gayo arabica coffee with aftertaste indicators. Meanwhile, bright lighting with a light temperature of 6500 K and illumination measuring ± 300 lux affects the perception of the taste of the Fragrance/Aroma, Acidity, Aftertaste indicators on Gayo honey Arabica coffee and Fragrance/Aroma, and on Gayo Natural Arabica coffee overall. Dim lighting with a cool temperature of 6500 K and light illumination measuring ±30 lux affects the Aftertaste, Balance, and sweetness indicators of Gayo Full Wash arabica coffee. Bright lighting with a warm temperature of 2700 K and light illumination measuring ± 300 lux affects the clean cup indicator on Full Wash Gayo Arabica coffee and the Flavour and Acidity indicators on Gayo Natural Arabica coffee. The condition of lamp 1 (light illumination of 30 lux and a light temperature of 2700 K) influences some of the most recommended Gayo arabica coffee taste indicators for the interior planning of coffee shop spaces. In addition, since lighting has a vital role in taste, the research results are expected to be considered for designing coffee shops. text |
