Summary:This study aims to determine the effect of arrowroot cookies consumption on fecal bacteria in children under five years old. Prebiotic components such as raffinose, FOS, resistant starch and dietary fiber of cookies were analyzed. The effect of daily administration of 5 pieces arrowroot cookies (30 g/day) on 2-5 years old healthy children fecal bacteria, SCFA, pH and water content, was assessed in placebo control trial during 10 days, with wheat cookies as a control. The exclusion criteria included use of antibiotics, as well as the intake of prebiotics and probiotics. The results showed that the prebiotic component arrowroot cookies was higher than wheat cookies. Resistant starch, soluble and insoluble dietary fiber, as well as raffinose and FOS value were 38.52
