Prebiotic components such as raffinose, FOS, resistant starch and dietary fiber of cookies were analyzed. The effect of daily administration of 5 pieces arrowroot cookies (30 g/day) on 2-5 years old healthy children fecal bacteria, SCFA, pH and water content, was assessed in placebo control trial during 10 days, with wheat cookies as a control. The exclusion criteria included use of antibiotics, as well as the intake of prebiotics and probiotics. The results showed that the prebiotic component arrowroot cookies was higher than wheat cookies.
