Summary:The pods and seeds of three vegetable legumes Cajanus cajan Linn. (kadyos or pigeon pea), Phaseolus vulgaris Linn. (abitsuwelas or snap bean and Phaseolus lupatus Linn. (patani or lima bean) - were analyzed for their protein content using the Bradford protein dye-binding method. The one-day old samples were subjected to cold storage at a temperature of 10 centigrade for an interval of twenty-four hours (24) for seven days or 144 hours. Data were analyzed using the One-Way analysis of Variance for a completely randomized design. Difference between treatment means were determined using the Least Significant Difference (LSD) test. Results showed that there was generally a significant decrease in the amount of protein in these three legumes during cold storage. Among the pods of the three species, that of Phaseolus Vulgaris and Cajanus cajan exhibited a highly significant decrease during the fourth and fifth day respectively. The protein content of the seeds of Cajanus cajan showed a highly significant decrease by the third day of cold storage while those of Phaseolus vulgaris and Phaseolus lunatus exhibited a highly significant decrease during the fourth and fifth day respectively.
