Microbial analysis of Dinuguan food samples from carinderias and restaurants

Dinuguan from six food establishments were analyzed for their microbial count and for the presence of coliform organisms. Five out of nine food samples from the three carinderias sampled showed microbial contamination but had a standard plate count of less than 100,000 colony forming unit/gram which is the standard set by BFAD. Three out of these five food samples however, showed the presence of coliform contamination with a most probable number index of 150,70, and 150 per 100 ml which do not conform with BFAD standard. On the other hand, all the results of the Standard Plate Count and Most Probable Number analyses of the food samples from the restaurants consistently conformed to the standards.
