Summary:Indonesia has a great potential in fisheries sector, but it is not aligned with the low fish consumption. One of the reasons is that people are less inclined to consume whole fish; they prefer ready-to-eat fish products. However, fish processing and preservation technologies in Indonesia have not developed well. Sambas Regency is one of the areas with substantial fisheries potential, yet the fish processing industry there is underdeveloped. One of the existing processing industries is MSMEs Cap Sembelan which only produces amplang. This research aims to develop processed fish products and production machinery in Sambas Regency. The desired product is processed dried fish equipped with seasonings and additional ingredients. A market research is conducted to understand the target market's interest in the product. Process mapping is carried out to identify process requirements, followed by marketing design. Subsequently, testing is performed to evaluate the process and production machine. The testing results serve as a guide for developing the production machine. The production process requires a dehydrator machine for drying the fish. Based on the testing results, it is determined that the purchased dehydrator does not yet meet user needs. Interviews and observations are conducted with five users, and the findings are transformed into personas and affinity diagrams. Five kinds of need are formulated, then translated into product specifications for developing design alternative. The selected alternative then developed into a prototype design and transformed into physical prototype. The final design is then subjected to internal testing and evaluation by experts. This reseach produces te business process of MSMEs, Mo-ikan marketing strategies, user needs for the dehydrator machine, and machine improvement recommendations.
