The milkfish sample were divided into 100 pieces and each sample was 5 grams. The research method was completely randomized design by using four concentration of cinnamon juice 0%, 5%, 10%. And 20% and four storage time 0 hours, 6 hours, 12 hours, 24 hours. The obtained data then were analyzed by KRUSKAL WALLIS and MANN WHITNEY. The results showed that the ratio hour and the concentration of cinnamon juice showed a significant at 6 hours with a concentration of 10%.
